Lemon Zingy Buns


You will need these ingredients

  • 100g (4oz) soft margarine and 100g (4oz) caster sugar
  • 100g (4oz) self raising flour
  • 1 teaspoon of baking powder
  • 2 eggs size 3
  • ½ a lemon
  • Makes 12 To Decorate
  • Lemon curd
  • Crystallized lemon slices


Equipment:

  • 12 paper cases and Patty tins
  • Mixing bowls
  • Grater and a Lemon squeeze
  • Wooden spoon and 2 teaspoons
  • Wire rack


Method

  • Heat the oven to 190 o C (375 o F) gas mark 5. Place paper cases inside patty tins
  • Place all the ingredients for the cakes in a mixing bowl. Grate the rind and squeeze the juice from the lemon and add to the ingredients.
  • Beat with a wooden spoon until thoroughly mixed. Using two teaspoons, spoon the cake mixture into paper cases. Do not fill them more than half full.
  • Put in the oven and bake for 20 minutes. Remove from the oven and cool the cakes on a wire rack.
  • When cold, top each with a little lemon curd and a lemon slice.
