Blueberry and Sunflower Seeds Muffins - Nan Fran's Recipe

Method:

Preheat oven to gas mark 6 / 200C.
Line the muffin trays with the bun cases.
Sift a tablespoon of icing sugar onto the plate and place the blueberries on there covering them all over, this will prevent them popping when being cooked.
Sift the flour into the mixing bowl and add the baking powder. Then sieve the caster sugar in followed by the blueberries and remaining icing sugar. Mix the ingredients together gently with the wooden spoon.
In a microwavable bowl melt the butter for 30 seconds.
Pour the milk into the jug and crack the egg in. (Ask an adult to help with this and always wash your hands before and afterwards) .Then beat them together with the fork until it becomes a light yellow colour.
Add the milk and egg mixture to the flour mixture and stir then add the butter. Stir all together but do not over mix.
Put the mixture evenly into the muffin cases using 2 spoons.
Place in the oven and bake for 15 – 18 minutes. (Always ask an adult to help you when using the oven). After about 12 minutes check the muffins making sure they are not over cooking. They should be golden brown with blue spots when finished.
